Chickpea Salad

2 cans garbanzo beans(drained and coarsely mashed)
1/4 cup shredded carrot
1/2 cup chopped celery
2 Tbsp sweet relish
1/4 cup chopped dried cranberries
2 Tbsp yellow mustard or dijon mustard for tanginess
1/4 cup red onion diced
3/4 cup vegenaise or mayo
1 Tbsp granulated garlic
1 tsp onion powder
Himalayan Pink salt and Pepper to taste

Mix all ingredients together. Taste and adjust seasoning accordingly. Store in refrigerator for at least 2 hours so cranberries will soften and flavors will blend together.
