Plantain Pizza

1 green plantain
1/4 cup almond flour
1 egg
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Preheat oven to 400 degrees. In a hi-speed blender, puree plantain, almond flour, egg, baking powder, sea salt and 1 tbsp. of vinegar together until smooth and creamy. Pour this mixture onto a parchment-lined baking sheet. Spread out with a spatula until the mixture is an even 1/2" thick.
Bake for 15-18 minutes, or just until the crust turns a light golden brown. Remove and cool slightly.
Add favorite vegetables and cheese then bake until cheese is melted.
